DIÁLOGOS DE COCINA - 2023: To Explore the current Gastronomy Scene From Top to Bottom

Diálogos de Cocina has curated a feast dedicated to dissecting the world of gastronomy from top to bottom in 2023. On March 13 and 14, the always unique gastronomic congress will traverse the sector, envisioning new narratives and possibilities. It will journey to all corners of the culinary world, much like Gulliver in Jonathan Swift's novel, with fresh eyes to uncover perspectives and embrace discovery.

Once again, Donostia-San Sebastián will serve as the venue for this daily menu of knowledge, debates, and exchanges led by top-tier speakers. Among them are the Mexican chronicler Juan Villoro, one of Iberoamerica's most renowned writers (winner of the Rey de España Prize in 2010), author of works such as "La noche navegable" and "El testigo"; the chef and activist Jenny Dorsey (USA), who challenges the status quo to drive social change through cuisine; and the British journalist and researcher Dan Saladino, host of the BBC radio program "The Food Programme" and author of the book "Eating to Extinction."

Sitting at the same table will be chefs Lucía Freitas, the chef behind A Tafona (Santiago de Compostela), who is also involved in projects like "Amas da terra," giving voice to the women who sustain the gastronomy of the region; María Nicolau (El Ferrer de Tall), the Catalan chef who has decided to break bad dietary habits with her book "Cocina o barbarie"; and the veterinarian, poet, and essayist, author of "Tierra de mujeres," María Sánchez.

Joining them will be the ethnographer and film director Eugenio Monesma, with over 40 years dedicated to documenting traditions of popular gastronomy and forgotten trades; the dancer and choreographer from Gipuzkoa, Jon Maya, founder of the award-winning company Kukai Dantza; the performative DJ with a presence at festivals like Sónar and Primavera Sound, Brava; the young chef and contributor to El Comidista, Claudia Polo (Soul in the Kitchen); and the ideologue behind the congress itself and chef of Mugaritz, Andoni Luis Aduriz. Additional names will be announced in the coming weeks, along with other pre-congress activities held through digital channels.

The Basque Culinary Center will be the stage for open discussions on topics such as creativity, diversity, memory, sustainability, and generational change. Tickets for this edition are already available through the Eventbrite platform and grant access to both days of the interdisciplinary congress. After the event, which will be held in person only on this occasion, the talks and roundtable discussions will be made available on the Diálogos de Cocina YouTube channel and its website.

Literature, music, architecture, cuisine, and history will once again serve as gateways to explore the gastronomic and human geography. A different kind of congress, a space for thought like no other, Diálogos de Cocina continues its ninth edition, fulfilling its mission to share knowledge and inspire all generations involved in the culinary world.
